- 1-12 oz package of your favorite flavor of Bilinski's chicken sausage-diced into 1/2" pieces
- 12 oz whole wheat bread-cut into 1" cubes, baked for ~15 minutes @325 degreesF
- 2 TBS Olive Oil
- 1 cup leeks (white and pale green parts), diced
- 1 cup celery, diced
- 1 TBS fresh sage, chopped
- 1 cup dried cranberries*
- salt & pepper to taste
- 1 cup fat free, reduced sodium chicken broth
- Preheat oven to 350ᄚF
- Heat a saute pan over medium heat, add in olive oil. Add in onion and celery, cooking until transparent, about 3 minutes.
- Add in Bilinski's chicken sausage, continue cooking until sausage begins to brown.
- Mix in chopped sage, dried cranberries and chicken stock, stir until everything is combined.
- Toss in the cubed bread, gently tossing until combined.
- Transfer stuffing to a casserole dish, bake covered for 20-30 minutes until heated through
- Remove from oven, allow to cool and enjoy!
*For some additional flavor in this dish heat the dried cranberries in a medium sauce pan with 1 cup of Grand Marnier (or another orange liqueur), bring to a boil and remove from heat.(alcohol is cooked off) Add in with sage and chicken stock.
