1 Tbsp Olive Oil
3 large cloves garlic, chopped
1 bunch scallions, chopped
1 package of Bilinski's Mild Italian Chicken Sausage, sliced
1 medium tomato, chopped in large chunks
1 large bunch escarole, chopped
1-15 oz can cannellini beans
In a large sauce pan, start simmering oil, then add garlic and scallions. Simmer for 5 minutes, then add chicken sausages and tomatoes. Simmer for 5 more minutes. Put escarole on top and then cannellini beans. Simmer until escarole is soft. Add salt and pepper to taste. Stir and serve immediately. Enjoy!
