3 links of Bilinski's Organic Spinach & Feta chicken sausage
1 lb whole wheat bow tie pasta
2 tsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 cups spinach, packed
2 large tomatoes, chopped
pinch of red pepper flakes
salt & pepper to taste
crumbled feta cheese
Heat salted water, adding pasta when it reaches a continuous boil. Continue cooking pasta until pasta is al dente. Drain when finished.
In a saute pan, heat olive oil over medium heat. Add in onion and garlic, cooking until fragrant (about 3 minutes). Add in packed spinach, chopped tomatoes, salt, pepper, red pepper flakes and sliced chicken sausage. Cook for several more minutes until sausage is warmed and spinach has wilted.
Add vegetable mixture and feta cheese to the cooked pasta. Enjoy!
