3 links of Bilinski's Organic Thai Style Red Curry chicken sausage, sliced
1 cup long grain white rice
1-14 oz can coconut milk, lite
1 Tbsp plus 2 tsp olive oil
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 garlic clove, sliced
salt & pepper to taste
Cook the rice according to the package, replacing 1 cup of water with coconut milk
Heat 1 Tbsp olive oil in a large pan over medium heat. Add in the peppers and cook for several minutes. Add in the garlic and sliced chicken sausage. Cook until vegetables soften and chicken sausage is warmed.
Serve the vegetables and sausage over the coconut rice. Enjoy!
