• Split Pea Soup with Chicken Sausage
 

1 Package of Bilinski's chicken sausage - sliced into 1 inch chunks

1 Package dried green split peas (20 oz)

2 Stalks celery - chopped

1 Large onion - chopped

1 Tbsp olive oil

12 Cups water

6 Medium carrots - sliced

8-10 baby potatoes - cut in half

2 Tbsp minced fresh parsley

1 Tsp dried thyme

Salt

Pepper

In large soup kettle, add oil, celery and onions.  Cook until tender.

Stir in split peas and 8 cups water.

Bring to a boil, then reduce and simmer for 30 minutes

Stir in 1 link chicken sausage, carrots, potatoes, and thyme.

Add the rest of the water and simmer for 30 more minutes until all the vegetables are soft.

Add the rest of the chicken sausage and heat for 5 more minutes

Add salt and pepper to taste.

Garnish with fresh parsley just before serving. Enjoy!
