1 Package of Bilinski's Buffalo Style chicken sausage, cut into chunks
1 Large onion, chopped
2 Cloves garlic, minced
1 Tsp olive oil
1 Chopped green pepper
1 Chopped red pepper
1 Tsp ground cumin
1 Tsp ground coriander
2 - 28 oz Cans diced tomatoes
2 - 15 oz Cans black beans
2 Tsp fresh chopped or dried cilantro
Hot pepper sauce to taste (use desired amout according to desired heat)
1 Cup brown rice (2 cups cooked)
Cook rice
In larger covered pot, cook oil, garlic, and onions until tender.
Add the cumin, coriander, tomatoes, and peppers.
Cook on medium for 15 minutes.
Stir in chicken sausage and beans.
Serve over rice.
Top with cilantro. Enjoy!
**Add a can of corn to make a full meal! Or serve with tortilla chips
Serves 4 - double it for a crowd.
