• Chicken Sausage Fajita
 

1 package of Bilinski's Mild Italian chicken sausage (or use Bilinski's Cajun Andouille if you prefer spicy foods), sliced into lengthwise strips

2 cloves garlic, chopped

6-8 scallions, chopped

2 tsp. olive oil

1 cup red peppers, sliced in strips

1 cup green peppers, sliced in strips

1 Tbsp ground cumin

1/4 cup fresh cilantro, chopped

1/4 cup fresh lime juice

1/2 cup monterey jack cheese, grated

2 cup chopped romaine lettuce

8 soft tortillas

Place the olive oil, garlic, scallions, and peppers, in a large pan. Cook on medium heat for 5 minutes or until the peppers begin to soften. Turn off the heat and add the cumin, lime juice and 2 Tbsp cilantro. Place each tortilla on it's own piece of aluminum foil (approx. 8 in square) On shell, place 3 Tbsp vegetable mixture. Top with 2 or 3 slices chicken sausage and 2 Tbsp cheese. Add a small handful of lettuce and 1 tsp fresh cilantro. Roll the tortilla shell then wrap aluminum foil around it. Repeat with each tortilla until all ingredients have been used. Place foil wraps on medium high grill for 8 minutes. Serves 6-8. Enjoy!
